As I don't speak Japanese, I have been getting my Ranma 1/2 manga from Viz. The Graphic novels are all in black in white. I wondered if the original Japanese manga were in color or partially in color? Also, does anyone know if Viz is skipping any issues?

The short answer is that the original Japanese manga was in black and white.
The more detailed answer is that some pages of the original were in color in some versions.
To explain: typically, a chapter of a manga series is first published in one of the big 'phone book' magazines, such as

The first couple of issues of Ranma that Viz released were in color even though the original Japanese version wasn't. Viz was releasing several manga colorized, until their readers asked them to stop.
