I have just re-watched the first episode of the first season and noticed (I had forgotten it) that in that episode Claire put her hand in the garbage disposer, cutting two of her fingers, that grew again.

So, why would she need to cut her little toe to see if it grows again, when she had experience on that matter? Are the writers forgetting things too?

She didn't cut them off. They were mangled and broken, but not missing.

then it has to be CONSIDERABLY LESS than normal, cuz you don't just get up and walk away after jumping xx stories, indestructable or not.

Not necessarily. Remember the speed with which she heals also means any pain she feels, however horrific, is of a very limited duration.
